The olives used for the production of Alce Nero extra virgin olive oil are grown in the regions of Italy with mild winters and hot summers, in accordance with the environmental regulations of approximately 160 of our olive producing partners. Olives are harvested by hand using mechanized devices to minimize damage. After harvesting, the olives are sent to the press, where the production process begins, turning the olives into oil by cold pressing.
