Alce Nero Biancolilla extra virgin organic monosort olive oil is produced by the cooperative AIP OLIVO S. C. A. p.A. in Palermo. Olives are harvested from October to January by hand using mechanical devices to minimize damage to the fruit. After harvesting, the olives are sent to the press, where the process of producing oil by cold pressing begins.
